This spaghetti maker is called a Chitarra meaning “guitar” in Italian.
The Chitarra originated around the early 1800s in the province of Chieti in Abruzzo.
To make spaghetti simply place a slightly thicker pasta sheet (2-3mm) on top of the metal strings and with a rolling pin press the sheet through to evenly cut square-shaped spaghetti, also known as maccheroni alla chitarra.
This tool also features a wider string setting on the opposite side to cut tagliatelle.
It comes with a wooden rolling pin.
NOTE: If the wire start to become loose, simply tighten the two screws on top of the tool to restore the original settings.
