This taralli are a typical Easter biscuits from the sud of Italy.
So simple to make this cookies come together easily.
They are not too sweet, with a beautiful vanilla and lemon flavour and the sprinkles add a touch of fun to the biscuits.

INGREDIENTS (makes about 12 biscuits)
For the taralli:
160g plain flour
1/2 tsp baking powder
1 egg
1/4 cup sugar
3 tbsp melted unsalted butter
1/2 tsp vanilla extract
1 tsp lemon juice
For the glaze:
1 1/2 cup icing sugar
2 tbsp water
4 tsp lemon juice
sprinkles for decoration
METHOD
Preheat the oven to 180º C and line two baking trays with baking paper.
In a bowl combine the flour and the baking powder. Meanwhile in a separate bowl start whisking the egg, sugar, butter, vanilla and lemon juice until combined.
Add the egg mixture to the flour and with a spatula combine the ingredients into a rough dough. Transfer the dough to a lightly floured surface and knead until you have a smooth and uniform consistency (it will take 4/5 knead). Place in the fridge for 10 minutes so it will be easier to handle.
Cut the dough into 12 equal pieces, then roll each piece into a 10 cm rope and form a circle giving them the characteristic doughnut shape. Repeat with each piece and place the biscuits into the tray well apart (they will expand a little).
Bake them for 10/15 minutes until golden brown. Once cooked let them cool off completely on a rack.
In a bowl combine the icing sugar, water and lemon juice and whisk them until smooth. Once the taralli are cooled glaze them and add the sprinkles.
Let the glaze harden up and serve.
