INGREDIENTS
500 gr strawberries, cut in smaller pieces
500 gr caster sugar
4 tbsp lemon juice
3 tbsp balsamic vinegar
METHOD
In a pot add the strawberries, sugar, lemon juice and let macerate for 15 minutes or until the mixture is starting to look wet.
Place the pot over medium heat and bring it to a boil.
Turn it down to a simmer and let it reduce for about 15 minutes.
Add the balsamic vinegar and cook for about 15 more minutes.
NOTE: do not reduce too much otherwise your jam will be hard once cool.
Let the jam cool off slightly before transfer it to a sterilised jar.
