A slice of Italy in this super easy to make cake.
The orange gives a fruity flavour and the polenta adds a bit of texture.
Moist and sweet, this cake is great as a dessert or with your morning coffee.
INGREDIENTS (makes a 24 x 14 x 8 tin)
250 gr unsalted butter
250 gr brown sugar
4 eggs
140 gr polenta
200 gr plain flour
2 tsp baking powder
Zest of 2 oranges
150 ml orange juice, freshly squeezed
FOR THE GLAZE:
1/2 cup icing sugar
1 1/2 tbsp orange juice
METHOD
Preheat the over to 140ºC (fan-forced) and lined your tin with baking paper.
Place the butter and the sugar in a mixer bowl and start beating until combined and fluffy.
With the mixer over low speed, add the eggs one at a time.
Once combined, add the remaining ingredients and mix until the batter is uniform.
Transfer the batter into the tin and bake for about 1 hour or until the skewer inserted into the centre of the cake comes out clean.
When cooked, gently remove it from the tin and let it cool off in a cooling rack.
Meanwhile, we can prepare the glaze.
Simply whisk together the icing sugar and the orange juice until the sugar dissolved and the paste is smooth.
Once the cake is completely cool, you can drizzle the glaze on top and serve.
