Lemon Granita



When life gives you lemon…you make granita.

Perfect as a dessert or in true Sicilian style as breakfast.


INGREDIENTS


500 ml lemon juice, freshly squeezed and filtered

500 ml water

250 gr sugar


METHOD


In a saucepan, add water and bring it to a boil.

Add sugar, and once completely dissolved and the liquid is clear, remove from heat and let it cool off.


When the syrup is cooled off, add the filtered lemon juice (filter it by using a sieve) and whisk the liquid well.


Pour the mix into a container and place it in the freezer.


After 30-45 minutes, with a fork, mix the compost. You will want to break any ice crystals that might have formed.


Repeat the process every 30 minutes, 2-3 times or until the granita has reached the right consistency.


You can keep your granita in the freezer for up to 15 days.
