Not sure why, but I've been crazy for coconut lately, so I've whipped together this coconut bread recipe.
I've been enjoying a slice in the morning with my coffee.

INGREDIENTS (makes a 24x 14 x 8 cm loaf tin)
2 Eggs
300ml coconut milk
2 tbsp coconut oil, melted
1/2 cup brown sugar
2 1/2 cups Self Raising Flour
1 cup fine desiccated coconut
METHOD
Preheat the oven to 160°C and line a loaf tin with greaseproof paper.
In a bowl, beat the eggs with milk and coconut oil.
When smooth, add the sugar and whisk until dissolved.
Start adding your dry ingredients. Combine the coconut first, followed by the flour.
Whisk the mixture until smooth, and then pour into the tin.
Bake for 50 minutes, until golden, risen and spongy.
Leave to cool and serve.
