Chocolate & olive oil biscuits



These biscuits come together so easily that you will want to make them day in and day out.

The olive oil gives the biscuit a unique flavour, without being overpowering.


INGREDIENTS (makes 8 biscuits)


1/4 cup unsweetened cocoa powder

1/2 cup caster sugar

2 tbsp extra-virgin olive oil

1 egg

1/2 cup all-purpose flour

1/2 tsp baking powder

Pinch of salt

Icing sugar


METHOD


In a bowl, mix the cocoa powder, sugar and olive oil until well combined.


With a hand mixer, beat in the egg.

When the egg is fully incorporated add flour, baking powder and salt. Mix until a smooth and soft batter is formed.


Cover the mixture and place it in a fridge to chill for 4 hours minimum.


Preheat the oven at 180ºC and line a baking tray.


With a spoon, scoop out a small portion of the mixture and roll it into 4cm balls.

Roll and coat each ball in icing sugar and place them into the tray, making sure they are well spread apart from one another.


Bake for 10 minutes.

Let them cool off on the tray for a few minutes before transferring them to a cooling rack.
