Coconut biscuits




I used to make these coconut biscuits in one of the last restaurants that I've worked in Italy.

They were one of the many biscuits in offer in our "biscotteria" which we were serving with the coffee at the end of the meal.

Sweet and chewy, after you have one you won't be able to stop.


INGREDIENTS (makes 30 biscuits)


180g Desiccated Coconut

200g Caster Sugar

40g Plain Flour

2 Whole Eggs

1 Pinch of Salt


METHOD


Preheat the over at 140ºC

In a bowl place, the sugar and the 2 whole eggs, and with a whisk (or hand mixer) combine the 2 until the sugar is dissolved.


Add to the mixture all the rest of the ingredients and with a spatula combine them, until a sticky dough is formed.


Line a tray with baking paper and with wet hands grab little bite-size of dough and roll it into a little ball.

Place it in the tray and repeat with the rest of the dough, making sure the balls are well apart as they will expand a little while cooking.


Bake at 140º C for 10/15 minutes or until lightly golden.


Once cooked let them cool off in a rack and enjoy them with your coffee.
