A “fridge cleaner” pasta recipe is what you need to use up the last few veggies left in your fridge and start the week with fresh veggies.
What I had left in my fridge was an eggplant, a leek and some baby cherry tomatoes.
Add you favourite pasta, a sprinkle of Parmigiano and you’ll had not only you have a beautiful fresh pasta dish but all a clean and ready to filled fridge.
IINGREDIENTS (serve 2 ppl)
130 g casarecce
1 eggplant, diced
1 leek, sliced
200 g baby cherry tomatoes
Extra-virgin olive oil
Salt
Parmigiano Reggiano
